Baked Lemon & Honey Chicken Thighs

Easy baked lemon & honey chicken that is loaded with great flavours and you can make in a hurry with just a few simple ingredients. Hope you enjoy, let me know in the comments if you make it !

Ingredients:

  • 6 boneless skinless chicken thighs
  • 1/2 cup chicken broth, or 1/2 cup of water and 1/2 cube of chicken bouillon cube
  • juice of half a lemon 
  • zest of 1/2 lemon
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 2 teaspoons of dijon mustard
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste 
  • 3 medium potatoes, peeled and cut in cubes
  • 1 handful of baby tomatoes, cut in half lengthwise
  • optional: fresh rosemary or sage and lemon slices for garnish

Steps:

1. In a large bowl, add the chicken thighs, chicken broth, lemon juice, lemon zest, honey, garlic cloves, dijon mustard, italian seasoning, salt and pepper.
2. Mix well and cover the bowl. Leave the chicken marinate for at least 15 minutes to 2 hours in the fridge. The more you leave the chicken marinate the more flavour it will have.
3. In a sauce pan, cook the potatoes in boiling water for 10 minutes. Don’t overcook them, they will keep cooking in the over with the chicken.
4. Preheat oven to 200°C (400 F) and grease a baking sheet.
5. Take the chicken out of the fridge, and place the chicken on the baking sheet. Pour remaining sauce over the chicken. Add the cooked potatoes and baby tomatoes.

5. Bake for 25-30 minutes (closer to 25 for smaller chicken breasts, closer to 30 for larger) until chicken is cooked through.
6. Garnish with fresh rosemary and lemon slices if desired and serve.
