Valentine’s Day Cookies

Happy Valentine’s Day Everyone !

Here is the recipe of some awesome iced oatmeal cookies ! They are fun to make and super nice to share with your love(s). Hope you enjoy xx

Ingredients for 30 cookies:

  • 3/4 cup butter
  • 2/3 cup brown sugar
  • 1 egg
  • 1½ cups flour
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1½ cups Old Fashioned Quaker Oats ( use a knife or mixer to chop the oats, make sure to leave some texture and to not mix it thoroughly)

For the icing:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • food coloring of your choice

Methods :

1 . Beat butter and sugar. Add in the egg and mix thoroughly.

2 . Add flour, vanilla, cinnamon, baking powder and oats to mixture. Mix well.

3 . Roll out dough on well floured surface with floured rolling pin, then cut with a heart cookie cutter.

4 . Place on parchment lined cookie sheet and bake at 350 degrees for 7-9 minutes until just golden.

5 . For the icing:Mix all the ingredients together and outline with a #4 tip and fill in a shape of heart.

Ombre Chocolate Cake

Happy Sunday !

This fabulous Ombré Chocolate Cake is perfect for any celebration. I had family over last weekend and thought it was a perfect occasion to test this recipe.

Preparation time: 1 hour
Cooking time: 30 minutes
Supplies:  4 (six-inch) cake pans

Cake Batter:

  • 500g of flour
  • 100g of sugar
  • 10g of baking powder
  • 250g of butter, melted
  • 6 eggs
  • 1 teaspoon of salt
  • 2 cups of milk
  • 100 g of cocoa powder

Frosting:

  • 300 ml of heavy cream
  • 250 g of mascarpone
  • 1/2 cup of sugar

Methods:

The cake batter

1 . First of all, separate the yolk from the white of each egg in two different bowl. In the yolk bowl, mix together the sugar, the melted butter and the yolk until mixture become whiter.

2 . Then add the milk, the baking powder and the flour.

3 . Add a pinch of salt into the egg white. Whip egg whites until foamy using an electric mixer.

4. Preheat the oven to 360°F. Next, butter and flour 4 (six-inch) cake pans. If you don’t have 4 pans, you can do this in batches of two.

5 . Slowly add the whipped egg to the previous mixture.

6 . Divide the batter amongst four bowls, each should weight 200g.

  • For the first layer (the whitest), pour into the cake pan and smooth out the top with a spatula.
  • For the second layer: add 15 g of cocoa powder, pour into the cake pan and smooth out the top with a spatula.
  • For the third layer: add 35g of cocoa powder, pour into the cake pan and smooth out the top with a spatula.
  • For the fourth and last layer: add add the rest of cocoa powder (50g of cocoa powder), pour into the cake pan and smooth out the top with a spatula.

7. Transfer to the oven to bake for 17 to 20 minutes, until a skewer inserted into the center comes out clean.

8 . Let the cakes cool down for 30 minutes.

Mascarpone Frosting 

1 . In a bowl: add the mascarpone, the heavy cream and the sugar and whisk until stiff peaks form.

To assemble the cake:

1 . Add a layer to the base of a cake board or cutting board. Top with a few tablespoons of the  frosting, smoothing it out to the edges. Repeat with the following layers.

2 . Add a few tablespoon of frosting all around the cake. Using a big off-set spatula, smooth out the sides. You can add any decorations on top of the cake, like chocolate chips or nuts. Enjoy !

 

Candlemas or Crêpes Day

Hey guys!

Today is a special day in France as everyone celebrate Candlemas or “La Chandeleur“. Nowadays it’s a family time most simply associated with eating crêpes, delicious thin French pancakes.

Preparation Time: 10 minutes + 30 minutes rest
Cooking time: 20 minutes
Supplies:

Ingredients:

  • 3 1/4 cups (750 ml of milk
  • 3 cups (375g) of flour
  • 4 eggs
  • 1 tablespoon of sugar
  • 1/4 cup of vegetable oil + 1/4 cup for the pan
  • 1 tablespoon of orange flower water

Methods:

1 . Put the eggs, oil, sugar, milk and orange flower water into the blender. Mix for couple seconds.

2. Then add the flour and mix for 1 minute. Allow the batter to rest for 30 minutes at room temperature before making the crêpes.

3. Heat a 12-inch nonstick skillet over medium. Lightly coat with a bit of vegetable oil. Add 1/3 cup batter and swirl to completely cover bottom of skillet. Cook until underside of crepe is golden brown, 2 to 3 minutes.

4. Loosen edge of crepe with a rubber spatula, then quickly flip. Cook one more minute. Slide crepe out of skillet and repeat with remaining batter.

5. Add any filling that you like: sugar, chocolate, jelly.. you have an infinite choice !

French Sugar Puffs ~ Chouquettes

Hello everyone,

Chouquettes are little sugar puffs of choux pastry, sprinkled with pearl sugar. Making the dough is simple and chouquettes will be perfect as a snack.

Preparation time: 15 minutes
Cooking time: 20 minutes

  • 1 cup (250 ml) of water
  • 1/2 cup (125g) of butter
  • 1 1/4 cup (150g) of flour
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 5 eggs

1 . Preheat oven to 360ºF. Line a baking sheet with parchment paper.

2 . Heat the  water, butter, sugar and salt in a saucepan. Bring to a simmer over medium heat. (Make sure it is not boiling!!). Remove from heat, and add flour all at once, stirring vigorously. Return the pan over medium-low heat and keep stirring until the dough forms a smooth ball that pulls away from the sides of the pan.

3 . Let the dough cool for 3 minutes then whisk in 4 eggs, one at a time, until shiny and smooth. Whisk the last egg but only add half of it into the preparation.

4. Use a piping bag fitted with a star tip to form small ball of batter.

5 . Make sure you are spacing the dough enough to give them a little room to spread. Brush with egg left-over using a pastry brush and sprinkle the dough balls generously with pearl sugar. Bake for 20 minutes. Once it is cooked, slightly open the oven and let them cool for 5 minutes. It will help to keep them fluffy. Enjoy !

Coconut Balls

Hello everyone,

I eat these little coconut balls all the time. My family and friends really love them. They are healthy and really easy to make! Yummy in my tummy!

Time prep: 15 minutes
Cooking time: 15 minutes
Supplies:

  • 2 mixing bowl
  • Whisk or electric mixer
  • parchment paper

Ingredients for 20 coconut balls:

  • 2 eggs
  • 1/4 cup of sugar
  • 2 cups of flaked coconut
  • salt

Method:

1 . Preheat oven to 350°F
2. Separate the egg whites from the yolks and add a pinch of salt into the egg whites. Whip egg whites until foamy using an electric mixer.
3 . Mix the yolks, the sugar and the flaked coconut.
4 . Slowly add in the whipped egg whites into the coconut mixture. Shape the mixture into mini balls and place them on a baking sheet covered with parchment paper.
5 . Cook for 15 minutes until golden.

French Meringue

Hello everyone,

So simple, meringues are fun and colorful and can be made for any occasion! They are super light, cloud-like and melt in your mouth with delight. Enjoy xx

Time prep: 15 minutes
Cooking time: 2 hours
Supplies:

  • Clean mixing bowl
  • Whisk or electric mixer
  • Parchment paper
  • Piping Bag

Ingredients for 30 meringues:

  • 2 egg whites
  • 1 cup (120 g) of sugar
  • food coloring

1 . Preheat oven to 250 ° F. Before starting, make sure that your bowl is free from grease as well as no egg yolk into your egg white.
2 . Whisk the whites, the foam and air bubbles will start to tighten. Add the sugar little by little and a few drops of food coloring.
3 . Fill the piping bag with meringue and slightly pipe the meringues on a baking sheet covered with parchment paper.Alternatively, you can use a soup spoon to scoop large, rustic meringues.
4 .Bake the meringues for 30 minutes at 250°F and then lower the temperature to 200 ° F.
Bake for an extra 1h30.

Double Chocolate Muffins topped with Walnuts

Hello everyone,

Today was a cold day in Paris and the best way I found to cope with it was to cook some nice muffins with a deep chocolate flavor. Topped with some nice chopped walnuts made them even better.  Hope you enjoy xx

Prep time 15 minutes
Cooking time 25 minutes

Ingredients for 24 muffins

  • 250 g of flour
  • 100 g of cocoa powder
  • 4 tablespoons of baking powder
  • 3 eggs
  • 250 g of sugar
  • 90 g of vegetable oil (canola)
  • 2 1/2 cups of greek yogurt
  • 1 tablespoon of vanilla extract
  • 1 pinch of salt
  • Chocolate chips and chopped walnuts

Preheat oven to 360 °F. In a bowl, add the flour, the cocoa powder, the baking powder and the salt.

In a second bowl, add the eggs and the sugar. Mix together energetically for 5 minutes. Add the vegetable oil, the greek yogourt and the vanilla extract. When everything is mixed add all the dry ingredients from the first bowl.

Fill each muffin cups 3/4 full and sprinkle with chocolate chips and chopped walnuts. Bake for 20-25 minutes.

Gluten Free Apple Pie

Hello everyone,

It’s almost Christmas and therefore it’s time to share some lovely recipes to share with friends and family.For my first blog post I decided to share with you my gluten-free apple pie recipe. In France, most of apple pies don’t have a dough on top which make them a bit lighter. The secret of a good gluten-free pie is its crust. This one crust is really easy to make with simple ingredients. Hope you will enjoy!

Prep time 15 minutes
Supplies
food processor or blender

Ingredients

  • 2 cups of almond flour
  • ¼  cup of rolled oat
  • ½ cup of powdered sugar
  • 1 egg
  • ¼ cup of butter
  • 3 apples
  • 1 tablespoon of cinnamon
  • 2 tablespoon of cane sugar

In the food processor, add the almond flour, the rolled oat, the powder sugar and the egg and mix well. Then add the butter and mix until you get a crumble crust. In a greased pie dish, add the crumb and press it you get something uniform. Then place the dish in the fridge or freezer for 10-15 min. Cut the three apples and in a bowl mix it with the sugar and the cinnamon. Place the apples in the pie dish in circles. Bake for 40-50 minutes until apples and crust are golden.
